Description

We committed to this international varietal out of pure passion and personal satisfaction, to see how it would adapt to our lands.

Cabernet Sauvignon is a full-bodied wine with an almost impenetrable ruby red colour. It is possessed of an intense balsamic character, with notes of mint and sweet spices.

The mouthfeel only serves as confirmation of the previous visual cues: strong, enveloping, rich, and balanced without excessively aggressive tannins.

Vinification Method

Usually the last grape variety to be harvested due to being late ripening compared to Barbera and Bonarda grapes. The perfectly ripe sparsely clustered bunches are hand-picked and placed in small crates. Once in the wine cellar, the grapes are destemmed, pressed and left to macerate in stainless-steel tanks for 14 days until they are completely done.

After the first rackings, the wine is left for a further 4 months in glass-lined concrete tanks and then aged for more than a year in small oak barrels.

Upon completion of the wooden barrel stage, the wine is left to rest in stainless steel tanks for 3 months before finally being bottled.

Soil and Vineyard Traits

Planted to see how it would adapt to our lands, our Cabernet Sauvignon vineyard is located in the Casa Benna estate, in Castell’Arquato within the province of Piacenza, Emilia-Romagna region.

The surgically planted vineyards are grown according to the Guyot method and are rooted in thin, specifically suited soil, made up of mostly iron-enriched clay.

Food Pairing

Cabernet Sauvignon is a very intense, full-bodied wine, which is at its best when complementing keenly flavoured main dishes.

Great match for roasted red meat and grilled meat.
