Description
Luce di Selce is a dry, still Malvasia di Candia Aromatica white wine with a pale straw yellow colour and a bouquet that presents an ample floral spectrum joined with hints of Golden Delicious apple and white peach.
Its fresh mouthfeel is enhanced by a pleasant savouriness and long finish.
Vinification Method
The MaIvasia grape bunches are hand-picked, carefully selected, placed in small crates and taken back to the wine cellar, where they are destemmed, pressed and crushed right away, separating the juice from the skins and grapeseed.
The juice is subsequently aged in stainless-steel tanks, then filtered and bottled. After bottling, it is left to rest for a little while before sale.
Soil and Vineyard Traits
Surgically planted on the hill behind the winery and grown according to the Guyot method for low yield but high concentration.
During the trenching and planting of the soil, a shard of flint dating back to the Neolithic period was found, giving the vineyard’s wine its name.
Food Pairings
Malvasia Ferma Luce di Selce is greatly suited to shellfish and white fish dishes.
It also goes well with spicy dishes and Eastern cooking.
