Malvasia spumante dolce is a pale straw yellow wine, brilliant, with a fine froth.
The varietal aroma typical of Malvasia is expressed here with notes of golden apple and citrus hints.
In the mouth, the immediate pleasure comes from a balanced, harmonious expression of the fruit.
The Malvasia di Candia Aromatica grape bunches are hand-picked, carefully selected and placed in small crates. They are then taken into the wine cellar, destemmed, pressed and crushed right away to separate the must from the skins and grapeseed.
The clear juice, that is the free-run must, is left to slowly ferment at a controlled temperature for 7 days.
Fermentation is stopped when residual sugar reaches 12%. This is then followed by Charmat method secondary fermentation and, lastly, bottling in December.
The Malvasia di Candia Aromatica vineyard that produces this sparkling wine is located in the Casa Benna estate, on the first hill of Castell’Arquato, in the province of Piacenza deep within the heart of Emilia.
The hill behind the winery houses the Malvasia vineyard, a grape variety that has always been grown in the Piacenza area.
It is grown according to the Guyot method to favour quality over quantity, on thin soil made up of mostly iron-enriched clay.
