A careful selection of the Bonarda vineyards with the lowest vigour and the most concentrated bunches are the basis of sisùra.
Each bunch of Bonarda is carefully harvested by hand, the manual harvest is the only one that allows for almost surgical precision: a careful selection ensures that only the finest fruits are destined for transformation.
In the silence of the cellar, the bunches are destemmed and pressed, starting a ten-day fermentation journey that will enhance their natural richness.
Frequent pumping over during this period preserves the vitality and intensity of the fruit, while the controlled temperature preserves the freshness of the aromas.
After months of rest in stainless steel tanks, during which the wine ages and the tannins soften, Sisùra is filtered, maintaining a vein of natural sweetness, and then entrusted to the bottles.
Here, in the darkness and silence, it awaits the moment to tell its story, to share the passion and dedication that created it.

Bringing the concept of Less is More to the vineyard, we select for Sisùra, the portions of vineyard that produce very few bunches but of an exceptional concentration. With these premises, we begin to harvest the grapes that will give life to Sisùra, the Bonarda you don’t expect, in antithesis to Bonarda intended as a drinkable and light wine.

Sisùra in Piacenza dialect is the shears, in our case the pruning shears as depicted on the label.
Sisùra is born from a cut, both concrete and figurative.
A concrete cut, that of pruning, with which the winemaker every year, chooses a single shoot that will bring the production of grapes of the year: if the pruning is rigorous, we will have few bunches but qualitatively excellent.
An abstract cut with the cliché of Bonarda understood as a light, pale, sparkling and sweet wine. Here Bonarda shows that it can show its muscles and can give still, full-bodied, tannic wines with an excellent concentration.
