The journey of “Orma di Irma” begins in the sun-kissed vineyards of Casa Benna in Castell’Arquato, where every bunch is a promise.
Expert hands carefully pick the bunches, placing them in small crates that preserve their integrity. In the cellar, the bunches are delicately destemmed and pressed, starting a fermentation that lasts about 8 days.
During this crucial period, every pumping over is important, as is the continuous monitoring of the temperature, a step towards preserving the innate freshness of the fruit.
It is an art that requires patience, attention and a deep respect for time and nature.
When the residual sugar reaches the threshold necessary for the subsequent refermentation, the primary fermentation is interrupted. The second fermentation then follows the Charmat-Martinotti method, with the advantages it brings such as a harmony and a softness that conquer.
This process, fruit of tradition and innovation, culminates in a wine that is not just a drink, but an experience: a sip of “Orma di Irma” is a dive into the tradition of Emilian sparkling reds, a toast to life.

Bonarda Frizzante ORMA DI IRMA is dedicated to the memory of Grandma Irma and celebrates her memories, when in the middle of the night she went down to the cellar to filter her favorite wine to have it sweet and sparkling the following spring
At the time, to keep the wine sweet, the “bag” filter was used: a wooden tub, on a structure that kept it raised, had sleeves on the bottom from which jute bags were hung that held the suspended lees and yeasts. the wine was poured in buckets into the filter, and slowly drained underneath.. it was a long and tiring job.. but the passion did not make Grandma Irma feel the fatigue.
The word “orma” in Italian indicates the imprint of the foot, and can also be understood as “trace of a path”.
United by the passion for Bonarda and our Territory, we too follow the path traced by Grandma Irma, with constant commitment and passion, both in the vineyard and in the cellar.
