Pervinca Emilia I.G.T. Rosso combines tradition and innovation of the Colli Piacentini, produced from pure ERVI grapes, the result of a cross between Barbera and Bonarda.
With an intense ruby ​​red color and a fruity and spicy aroma, it offers a soft, balanced and persistent palate.
This wine represents a new variety with promising potential.
It is ideal with roast red meats, furred game and braised meat with polenta.
Its fruity and spicy notes combine well with the richness of the dishes, offering a gastronomic experience that reflects the culinary roots of Emilia.

Description

The vinification of Pervinca begins with the manual harvesting of the Ervi grapes, in small crates to carry the whole bunches to the cellar. The grapes are then destemmed and pressed and the must is left to ferment.
Fermentation takes place in stainless steel tanks at a controlled temperature for 10 days, with daily pumping over to optimize the extraction of color and tannins. After 6 months of aging in steel, the wine ages for 4 months in Slavonian oak barrels, acquiring complexity without overpowering the characteristics of the grape variety.
A final aging in the bottle for at least 6 months precedes marketing.

The Ervi vineyards from which Pervinca is born are located on the first hill of Castell’Arquato, famous for its suitable soils and its winemaking tradition.
With an average age of 5 years and a simple Guyot training system, these vineyards enjoy an ideal microclimate and well-drained soils, which give the wine a strong and distinctive character.
The yield per hectare limited to 85 quintals guarantees the quality and concentration of the grapes, and the intensity of the perceptions on the palate.

Pervinca takes its name from the spontaneous flower that has always grown on the western borders of the vineyard, and which contains the name of the vine “ERVI”, but also “Per”, or x in mathematics, which symbolizes a cross, like the vine from which it is born. This variety was selected by Prof. Mario Fregoni in collaboration with the Catholic University of Piacenza by crossing Barbera and Bonarda.
